In a mixer beat butter, sugar, orange peel, and vanilla until smooth. Add flour, baking soda, and salt. Beat on low speed until dough comes together, about 5 minutes. Mix in cranberries and coconut. Bake at 325 degrees until cookie edges just begin to brown, about 8-10 minutes. Yields 6 dozen small cookies. Note: If it is too crumbly to form into balls the dough needs to be mixed longer. It should be a smooth, homogenous mass.
